A Portuguese side made of spinach. There’s no proper translation for it, is just a load of spinach mushed up with vegetable spread and garlic, super tasty, the ideal side for a rice dish, pasta, curry, it pretty much goes with any main. Simple and delicious, only a few tricks to make it 100% vegan. Full of iron, vitamin C and a load of other goodness.

Time: 40 min approx.

Serves 2-3 people

What you need

Food:

1 bag washed baby spinach

1 garlic clove finely chopped

Half tbsp vegetable spread

2 tbsp all-purpose flour

2-3 tbsp unsweetened plant milk

Salt to taste (optional)

Utensils:

Frying pan

Knife

Large bowl and boiling water

Sieve

Directions:

Place all the spinach in a large bowl and cover with boiling water; leave it for a couple of minutes;

Drain all the water from the spinach using a large sieve; leave it for as long as possible (ideally at least 30 minutes). If you’re running out of time, you can press the spinach against the sieve to remove all the water quickly- they should look dryish;

Melt the vegetable spread in a frying pan, along with the garlic for a couple of minutes;

Add the spinach and cook for a further 2-3 minutes, stirring occasionally;

Add the flour and plant milk and stir for a couple of minutes until it all looks well incorporated and the milk has evaporated;

Add salt to taste (optional);

Serve immediately while still hot.
