3 flavours dessert

My mum used to make 3 flavours desert in the restaurant all the time, so I did have quite a lot growing up! It only made sense that I tried and veganise it… Between us, you know you’re in the right path when the vegan version tastes a lot better than the original one! 🙂 It’s not a last minute dessert as it does take time to settle, but it is worth it!

Serves: about 6 individuals servings

What you need

For the flan:

500ml unsweetened soya milk

3 tbsp brown sugar

1 cinnamon stick

1 small piece of lemon skin

½ tbsp cornflour

1 tsp vanilla essence

2 tsp agar agar flakes  

+ a few vegan ‘maria’ type biscuits, or rich tea

For the chocolate mousse:

Liquid from 1 can of chickpeas

1 tsp vege-gel (veggie gelatine)

1/3 cup icing sugar

150-200g melted dark chocolate (depending on how chocolaty you want it)

Utensils:

Large mixing bowl

Hand mixer with beater attachment

Mixing spoon

1 medium pan (for flan)

Small bowl (for chocolate)

1 small pan (to melt chocolate)

Directions:

For the flan:

Pour the soya milk (room temperature) and agar agar flakes into the pan, stir and let it sit for about 30 minutes;

After 30 minutes, add  all the ingredients except the cornflour, bring to a low heat and let it simmer for a few minutes, stirring occasionally;

Dissolve the cornflour in a little water and add to the mix, bringing it to a boil; It should thicken up, a bit like custard, and all the flakes should be dissolved;

Don’t forget to take out the cinnamon stick and lemon skin;

Pour into individual dessert cups and add a biscuit in each one, and set aside;

For the mousse:

Melt the chocolate in a heat-proof bowl above water, directly in the pan over a very low heat, stirring frequently or in the microwave- set aside to cool a bit (the time it takes to make the aquafaba is enough);

Pour liquid from a can of chickpeas, icing sugar and vege-gel powder into a mixing bowl (make sure it is dry beforehand) and whip the aquafaba until it forms stiff peaks- it can take up to 10minutes so don’t get frustrated!;

Fold the cooled melted chocolate into the whipped aquafaba;

Spoon the mousse on top of the flan and biscuit in each serving cup and chill for at least 2-3h.
