Migas

‘Migas’ is probably one of my favourite Portuguese dishes, and is vegan! Well, I’ve seen some random combination where people add bacon, but no, that is wrong, for obvious reasons, but also, doesn’t add anything to the flavour. Super easy and nutritious, usually a side dish but can also be a main, why not? Don’t be shy on the olive oil and garlic!

Time: about 30 min

Type: side dish (or main)

Difficulty: 1 pan

Serves 2-4

What you need:

Food:

2 cups dark greens (cabage)

1 cup shredded corn bread

1 can black eyed peas

Olive oil (about 2/3 tbsp)

2 garlic cloves

2 tsp garlic powder 

Pinch of salt

Utensils:
Large pan

Mixing spoon

Directions:

Boil the greens with the garlic cloves and a pinch of salt for about 20min;

Before removing the water, mix in black eyed peas and let it cook for a further 2 minutes;

Remove the water and garlic cloves, mix in the corn bread, garlic powder and olive oil, mixing all well over low heat for about 2/3 minutes until all the bread is soft and moist (add more olive oil if necessary);

Serve while hot.
