Tofu ‘Zé do Pipo’ style

Another codfish adapted recipe. This is a very rich dish, full of flavours, I’d say ideal to make for a dinner party for your vegan friends, for example. It does require a few steps, so a little time consuming, but nothing out of the ordinary.

Serves: 3/4 servings

What you need:

For tofu: 300g firm tofu, finely sliced, 2 tbsp olive oil, 2 tbsp soya sauce, oregano, paprika, garlic granules, black pepper and salt to taste

For onion mix: 1 tbsp olive oil, 1 big white onion sliced, 1 beef tomato cut into small chunks, 2 garlic cloves finely chopped, 2 bay leaves

For potato puree: 1 kg white potatoes (and water to boil), a few tbsp plant milk, 1 tbsp vegetable spread, nutmeg, salt and pepper to taste

For mayo: 1/2 mug unsweetened soya milk, 2 tsp garlic granules, a little salt, 1 tsp lemon juice, 1/2 mug vegetable oil (or half vegetable oil, half olive oil)

a few olives to decorate

Utensils:

knife and chopping board;

food processor;

potato masher;

1 baking tray;

measuring mug;

1 pan for puree, 1 frying pan for tofu and 1 small frying pan for onion mix.

Directions:

To make the mayo: add everything into a food processor and blend until you achieve mayo consistency- place in the fridge while preparing the rest of the ingredients;

to make the puree: peel, cut into small pieces and boil potatoes for about 20 min till soft; remove water and add all the remaining puree ingredients- mash and mix well till no lumps remain;

tofu: heat olive oil in a frying pan over low heat and add tofu slices and all the remaining ingredients- cook for about 5 minutes, flick the tofu over and cook for further 5 minutes;

onion mix: heat olive oil in a frying pan over low heat and add all the ingredients for the onion mix- cook for a few minutes;

In a large baking tray, place half of the onion mix in the middle, followed by the tofu and topped with the rest of the onion mix; Add puree all around the middle onion and tofu mix;

Next, add the mayo in the middle covering the middle mix.

Scatter a few olives on top for decoration- bake for a about 20 minutes in a pre-heated oven;

Serve immediately while hot.
