Energy Balls

Energy balls are a must in my cupboard. They’re so yummy and packed with good nutrients, a bit of sugar, but only from dates. This recipe is versatile, you could add shredded coconut or chocolate chips for example. Delicious anyway!

Difficulty: 1 pan

Type: snack

Serves: about 20 balls

What you need:

250g pitted dates

60g rolled oats

50g roasted unsalted peanuts

1 tbsp soft peanut butter

1 tbsp water

1 tbsp flaxseeds

Utensils:

Food processor

Directions:

Roast peanuts for about 10/15 min at 200 degrees Celsius ;

Add peanuts into the food processor and blitz to crumbs;

Add the remaining ingredients into the food processor and pulse until it all combines and forms an uniform mixture (if too dry, add a little more peanut butter or water);

Shape mixture into small balls using your hands;

These will keep for a week or 2 in the fridge.
