Serradura (Sawdust)

Well, my life is complete now! Vegan sawdust, the most delicious of all desserts. Super easy to make too, is great as a sweet treat for special occasions (or just because).

Difficulty: 2 pans

Time: 2:30h for condensed milk +10 minutes to prepare all + 2h in the fridge once prepared

Type: dessert

Serves: depends on the size of your individual dessert containers, but about 6 to 8 individual portions

What you need:

1 portion of condensed coconut milk ( 1can of full fat coconut milk plus 1/4 cup brown sugar)

330ml of double plant cream (I used Elmlea Plant double)

about 200g rich tea biscuits (or ‘Maria type’) crushed

Cocoa Powder to decorate

Utensils:

small pan

measuring jug and mixing spoons

food processor

Hand mixer with the whisk attachment

1 bowl for whipped cream

Individual dessert containers

Directions:

Condensed coconut milk: bring coconut milk and sugar to a boil in a small sauce pan; reduce heat to minimum and let it simmer for a while (about 40 minutes) mixing occasionally- the final mix should be about half of the initial amount and thicker. Transfer to a small container and let it sit in the fridge for a couple of hours (it’ll become firmer);

Whipped Cream: transfer cream to a large bowl and whisk in medium speed for a few minutes until is firm and you see trails in the cream that don’t dissolve after the whisk moves; reserve;

Biscuits: crush biscuits using a food processor (or by hand);

Mix coconut condensed milk with whipped cream, mixing well (but not vigorously); Reserve 1/3 of this mixture and 1/3 of the crushed biscuits;

Mix 2/3 of the crushed biscuits with the 2/3 of the whipped cream and coconut condensed milk mixture;

In individual dessert containers, add a layer of the cream mixture with biscuits (this is the bulk of the dessert), followed by a little layer of crushed biscuits, followed by a little layer of cream mixture (without biscuits); sprinkle some more crushed biscuits on top and dust a little cocoa power on top too.

Leave in the fridge for at least 2h before serving.
