
This is a very Portuguese salad… the garlic, olives, nori and lemon really bring out the other ingredient’s flavours too. It can be eaten hot or cold, so, a good option for cold and hot weather. The jackfruit replaces the codfish, but if you prefer you can use mushrooms or omit the jackfruit and add more chickpeas.

What you need:
3 medium size potatoes, peeled and chopped
2 garlic cloves, chopped
1 tbsp extra virgin olive oil
1 tin jackfruit in water, drained, rinsed and shredded
1 bay leaf
1/2 red or green pepper, finely sliced
1/2 white onion, sliced
1 tin chickpeas
black (or table) salt & white pepper to taste
1 or 2 tbsp of green or black olives
1 nori sheet, shredded
1 tbsp fresh coriander, chopped (optional)
1 lemon, juice

Directions:
Prepare all the vegetables and jackfruit;
In a pot, boil potatoes, jackfruit and shredded nori for about 20 minutes till potatoes are tender; once cooked, drain the water;
Meanwhile, in a frying pan, fry the garlic with the olive oil for 3 minutes till cooked;
In a bowl, mix all the ingredients, including the garlic and olive oil, add lemon juice and salt and pepper to taste – mix well;
Garnish with chopped coriander on top (optional) and serve hot or cold.
