
This wellington is easy to make, delicious and looks great, so a good meal to make if you want to impress your guests!

Makes: 3 to 4 portions
What you need:
4 small beetroots, peeled and roughly chopped
1 carrot, peeled and roughly chopped
1 small onion chopped
120g finely chopped mushrooms
1 celery stick, finely chopped
1 tsp garlic powder
a handful of fresh thyme sprigs
1 tbsp vegetable gravy granules
300g short crust pastry, in a rectangular shape
splash of soya sauce

food processor

Directions:
Place beetroots and carrot in a food processor and blend until shredded into little pieces;
Add all vegetables, fresh herbs and garlic powder in a large pan with a little water and cook over low heat for about 10 minutes, mixing occasionally (best to keep the lid on);
Once vegetables are tender, add gravy granules and a splash of soya sauce and mix well; adjust seasoning if necessary;
Keep pastry in the baking paper and place it in a baking tray;
Spread the prepared vegetables in the middle portion of the pastry, leaving some empty space in both sides;
Cut the pastry sides diagonally and cross over each other until they all cover the vegetable mixture; cover both tops too; sprinkle a little more fresh herbs on top;
Bake in a pre-heated oven at 200C for about 25 min till golden on top;
Serve while hot.
