
What a delicious, filling and easy meal to make! Plus, if you have little ones, this a great idea to get them to eat some ‘hidden’ vegetables. This is a staple in my kitchen, there is always appetite for a cheeky mc No cheese. It’s great on its own or you can add cooked beans, stir fried veggies or a nice salad, for example.

What you need:
400g macaroni pasta (best to use wholemeal)
1 large potato, peeled and sliced
1 large carrot, peeled and sliced
1 small onion, roughly chopped
50 to 80g cashews, soaked in boiling water for about 15 minutes
1 tsp garlic powder
1 tsp smoked paprika
1/4 tsp white pepper
2 tbsp nutritional yeast
salt to taste
water as needed

Directions:
Start by soaking cashew nuts; once soaked, drain and rinse;
Boil potato, onion and carrot for about 15 minutes with just enough water to cover them, until vegetables are tender (keep cooking water);
Cook pasta in a large pan according to package instructions (about 15 minutes);
Put cashews in the blender and add vegetables with cooking water, garlic powder, paprika, pepper and nutritional yeast- pulse until it has a creamy consistency (add more water if necessary);
Add salt to taste (if using) and pulse a little more to mix;
Add to cooked and drained pasta and mix well – serve while hot.
