
These flapjacks are both delicious and nutritious, with each slice offering around 10% of daily omega-3 requirements and many minerals such as magnesium and manganese. They are also low in sugar, a perfect snack for little ones too.

Makes: about 12 squares
What you need:
1 and 1/4 cups regular oats
2 tbsp shredded coconut
1 tbsp ground flaxseed
1 large ripe banana or 2 small bananas
3 tbsp smooth peanut butter
1 to 2 tbsp maple syrup
1 tsp ground cinnamon (optional)
Directions:
Mix all dry ingredients in a bowl;
In a small bowl, add bananas, peanut butter and maple syrup and mash it all together (or, add all to a blender and process till well incorporated);
Add wet ingredients to dry ingredients and mix well;
Transfer to a baking tray lined with parchment paper and press down mixture until it’s even;
Sprinkle with ground cinnamon on top (optional);
Bake for about 20 to 25 minutes at 200C until golden;
Allow to cool before slicing; keep in a closed container for a few days.
Note: you can add some chocolate chips to the mix before baking, it is a nice complement.
