Just some delicious cinnamon biscuits, tasty and easy to make!
Time: 30 min
Type: biscuits
Difficulty: 1 pan
Makes: about 12 biscuits
What you need:
220g self-raising flour
3 tbsp maple syrup (or more to taste), plus a little for brushing
45g smooth almond butter
30g vegetable spread
1 flax ‘egg’
1 tsp ground cinnamon (plus more for dusting)
Utensils:
measuring cup/ scales
mixing spoons
baking tray and parchment paper
small bowl and baking brush
Directions:
Prepare the flax ‘egg’ (mix 1 tsp of ground flaxseed with 3 tbsp of water);
Pour flour and ground cinnamon into a large bowl;
Mix in the almond butter, vegetable spread and maple surup;
Add flax ‘egg’ – with one hand, mix it all well until it forms a uniform biscuit dough that isn’t sticky (if too dry, add a little water or plant milk; if too sticky, add a little more flour);
Pull a piece of the dough at a time, roll into a small ball, place into the parchment paper and flatten it out; repeat until all dough is used;
Brush a little maple syrup on top of each biscuit;
Bake into a pre-heated oven at 200C for about 16 minutes;
Remove from the oven and sprinkle a little more ground cinnamon to taste;
These biscuits can be stored in a closed container for a few days.
