No fish, big pasta

‘Massada de peixe’ is a traditional dish found in many restaurants close to the sea, in Portugal. Is so easy to make it vegan, just leave the fish in sea, where they belong, and use some tofu and sea weed instead. Delicious!

Difficulty: 1.5 pans

Serves: 3 portions

What you need:

1 carrot, sliced and cut into small chuncks

1 large tomato, chopped

1 small onion, chopped

2 garlic cloves, chopped

1 bay leaf

1/2 leek, chopped

300g conchiglie pasta

1 nori sheet, shredded

250g tofu, cut into small cubes and roasted in 1 tbsp of soya sauce for 30 minutes

1 tbsp chopped fresh coriander

1 tbsp capers

salt and white pepper to taste

baking tray

large pan

knife and chopping board

blender (optional)

Directions:

Bake the tofu at 200C for about 30 minutes till crispy;

Prep all the vegetables;

In a pan, cook the onion, bay leaf and garlic in a little water over low heat for a few minutes till soft; add carrot, leek and tomato and let it simmer for a few minutes;

Add tofu, shredded nori (I use a blender so it turns into very small pieces), capers and pasta -mix and cover with boiling water (enough to cover all)- let it simmer for about 20 minutes till pasta is cooked through;

Once cooked, add chopped coriander and salt and pepper to taste; mix well and remove from heat;

Serve while hot.
