
These energy balls are so good and so easy to make, it’s unbelievable! Hazelnuts and dark chocolate are one of the best combinations, and it really tastes like a ferrero rocher…yum!
Nutritionally, they are rich in protein, fibre and calcium, and very little saturated fats.

Makes: about 20 balls
What you need:
75g choppd hazelnuts
80g oats
2 tbsp peanut butter
2 to 3 tbsp boiling water
250g pitted Medjool dates
30g dark chocolate
3 tbsp plant milk
Directions:
Blitz chopped hazelnuts and oats in a food processor for a few seconds;
In a bowl, mix boiling water with peanut butter until it combines and add it to the food processor mix, along with the dates – pulse until it all combines well;
Form little balls with your hands;
Melt chocolate and plant milk in the microwave for a few seconds- stir to mix;
Dip one half of each ball in the chocolate and let it dry at room temperature or in the fridge.
These will keep in the fridge for at least a week.
